Earlier this month, my fellow Year 11 food studies classmates and myself went on an excursion to Peppermint Ridge Farm in Gippsland. During this excursion, we discovered native fruits and vegetables of Australia, learning about their many healing and cooking properties from our guide, Julie Weatherhead. Julie led us around her farm, teaching us about native plants, such as Lemon Myrtle, Anise Myrtle, Finger lime, Strawberry gum, and River mint.
We then headed off the kitchen to use these native ingredients and other materials to make an assortment of sweet and savory items, like chocolate and strawberry gum cupcakes and Lemon Myrtle ANZAC cookies, both of which were delicious. All the Year 11 boys really enjoyed the opportunity to experience the unique new flavours of the ingredients that we’d never encountered before.
